Life lesson + eats lately {WIAW 10/23}

Before we get to the food, it’s time for a life lesson, so huddle up (or scroll ahead a couple paragraphs if you just want the eats). Ready? Here it is: if you don’t give your body what it needs, it will take it. Even when you aren’t doing a good job taking care of yourself, your body’s number one priority is it’s own health and survival. It’s actually kind of amazing, and it comes up in a lot of contexts. I’ve talked a bit lately about knowing when to slow down. And while I’ve been trying to do exactly that, the truth is, to keep up with my workload, for the past two weeks I’ve cut my normal 8 hour sleep schedule back to 6.

The importance of sleep is a topic for another day, but the point is that while I knew this wasn’t sustainable, I pushed it anyway. The result? I felt sick all day yesterday. ThenΒ I completely crashed last night and just couldn’t get up this morning. I didn’t want the sleep, but my body forced it on me. So it’s another one of those listen to your body moments. It’s clearly telling me there’s nothing left to give in this area, so I’ll reset my schedule to 8 hours and find another way to get everything done. Now back to our regularly scheduled programming.

It’s What I Ate Wednesday, hosted by Jenn at Peas and Crayons! Here’s a peak at what I’ve been eating lately.

Breakfasts

In addition to my fav egg whites, salsa, and avocado, egg white omelets have made their way back into my life. Jessie joked a couple weeks ago about how eggs are always ugly in pictures, and I totally agree.

Pro tip: use Cabot Seriously Sharp Cheddar any time you need cheese, ever. We Vermonters do cheese right. To me, any cheddar other than Cabot cheddar is so mild it tastes like American.

Lunch

Remember how last Wednesday’s theme was eats on the run? Well later that day I literally on the run, or at least on the walk. I snagged a scoop of egg salad and a KIND bar from the cafeteria at school and inhaled it while I walked across campus to class.

My other lunches have mainly been leftovers from dinners, because I finally had some time to cook again!

Dinners

More pumpkin pasta {recipe}Β I made a few minor modifications this time since I was missing ingredients. One of the things I’m learning about cooking is not to abandon a meal idea just because you don’t have exactly all the ingredients you need.

Mmmmmm.

After a particularly busy day, John surprised me with some GF pizza at home. I added broccoli to balance it out a bit.

peasI FINALLY made Tara’s Italian Summer Squash Bake {recipe}. John is pretty obsessed with it, so I was happy.

I’ve been trying to keep my desserts to Chobani flips because I’ve been indulging a lot lately, but this week we did get froyo for the first time in a looooong time.

IMG_3020My cravings lately have been more cookies than froyo, hence the hiatus, which I think might be because it’s getting colder? I crave froyo in the dead of February so not wanting it all day every day has been odd πŸ™‚

      Luckily, I sleep like a log when I actually let myself sleep. My husband is definitely a tosser and turner!

    Sleep is so important and it kills me when I hear of people only getting a few hours a night. My hubby wakes up around 4:30 at least 3 days a week to hit up the gym and if he’s not in bed by 10:00 I get mad at him since I know he won’t get enough sleep. I get at least 8 hours and any less than that I feel it! I definitely think my migraine yesterday was attributed to a sleepless night the day before. I NEED my sleep!

      Right?! I feel like people brag about how little they sleep, and all I can think is “do you realize what you are doing to your body??”

    Sleep is such a huge factor in how we feel. I try to set an alarm to go to bed (strange, but sometimes helps…sometimes) but still end up going to bed much later than intended and it bites me in the rear later on. I’ve been craving sauteed kale like no other and thank goodness it’s easy to whip up. I have to make sure my foods are in a decent light but usually ice cream and anything pasta like fail.

    I truly believe froyo is delicious year-round. Then again I’m from California where it can be summer year round πŸ™‚

      I think an alarm to go to bed is a fabulous idea! I’m more of a morning person so I usually go to bed with no problem but I definitely have a set time when my mental alarm bells start going off!

    I am almost always missing ingredients and therefore always modifying recipes. Luckily, they usually all turn out ok! Listening to your body is SO important–especially when it comes to sleep. I am a firm believe that sleep impacts your overall happiness πŸ™‚

    It’s so true about getting enough sleep. My daughter is teething right now so we definitely haven’t been getting enough sleep. We both get cranky during the day because of it haha :]

    Your pumpkin pasta looks delicious. Kind bars are so good! I usually keep one in my bag just in case.

    I tried to take photos of lasagna I made last night and they looked horrible. I just couldn’t get a good shot of it. It’s usually the grossest looking food that tastes the best I have noticed.

      Ahh I’ve heard that teething is the worst for sleep! Lasagna is another good one that’s awful for pictures. I feel like anything sloppy is just a lost cause.

    Let me just say that everything looks delicious! Even if the egg whites don’t photograph right!! Also, I just ate that same flavor kind bar tonight for a snack!! YUM! I love sea salt and chocolate! And I just a froyo a few nights ago, but as it cools down I usually start to crave hot chocolate or tea! Thanks for sharing your eats with us!

      It’s my favorite flavor of KIND bar too! Something about the salt with the chocolate is just amazing. I definitely start craving hot chocolate as it gets colder. I was just saying to John that we need to get some πŸ™‚

      It’s my fav!! I’ve had it before but sometimes they’re hard to find. Luckily now that KIND is getting more popular I’m finding the chocolate sea salt in more places. It reminds me of salted chocolate caramels mmmm so good πŸ™‚
