Thank you all so much for your amazing support of Friday’s post. I was overwhelmed (in a good way) by the response, and many of your comments brought tears to my eyes I was so touched. I promise I’ll be responding soon (hopefully today), I just had to take a step back from the topic for a bit. <3

MEALS

I’ve been working my way through my personal Pinterest account to organize my recipes a little better. When I first signed up for Pinterest, I never cooked, so the recipe board was a catch-all for delicious looking things that I would never make. Now it’s huge and unwieldily, so dividing it up was a necessity. The result has been digging up some old fav recipes, so that’s fun!

Monday: Farmer’s market skillet {recipe}

Tuesday: Broccoli quinoa casserole {recipe}

Wednesday: Guacamole and grilled corn pasta {recipe}

Thursday: Falafel pie {recipe + recipe}

Friday: Veggie burgers {recipe} (still looking for one that will hold together!)

Saturday: Maybe a date night?

Sunday: Pizza

WORKOUTS

Our March yoga challenge has started! Guys, it is seriously so fun to see everyone’s pictures. If you missed the start, you can still join in and catch up. We have lots of fab prizes. 🙂

Monday: Yoga + teach PiYo Strength

Tuesday: Yoga + teach Zumba + abs

Wednesday: Yoga + TRX + teach Zumba

Thursday: Yoga + teach Zumba + abs

Friday: Yin yoga (recovery day)

Saturday: Yoga + run (if the weather is nice) or TRX

Sunday: Yoga + lift/TRX

I ordered a new workout DVD set that I’m excited to try out and share with you all. More on that next week I hope!

    Ooh all those eats look great! I want to try that guacamole and corn pasta and the falafel pie! I’ve been craving falafel after seeing it on How Sweet It Is with the feta dip. I’m doing a 21 classes in 31 days for Pure Barre this month and I’ve got one class down but I’m kind of nervous about doing the rest. I usually avoid doing back-to-back classes because by day 3 my muscles are really feeling it. Maybe yoga/stretching at night will help? Have a great week, Kim!

      Hm, it might help, but in general I feel like it’s best not to do the same thing on back to back days. 21 classes in 31 days sounds like a lot! Good luck lady 🙂

      Really? That’s so funny! I almost exclusively make recipes I’ve pinned (from my blends of course). I guess that’s because I don’t have your superstar kitchen skills! 🙂

    Can I please come over for dinner every day this week? Every single thing that you have planned sounds delicious!

    My pinterest recipes are pretty much all piled in together, except for drinks and desserts, for both my personal and blog pinterest. At some point I figured I’m not enough of a culinary connoisseur to separate them, but now there are so many I have to pore through everything before I find what I need!

    That felafel pie sounds amazing!! I am in the process of trying to better reorganise my Pinterest as I have SO many pins and not enough divide between the categories.

    You all are doing so well with the yoga challenge so far. I have loved seeing all the pics on IG!! As your cheerleader I feel it is my duty to say GET IT GIRL!!! 😉

    I’m a little late on this post but these are the best veggie burgers I have ever ever ever made at home.

    They are vegan but they really do hold together! Must be the beans! Or the rice. I have no clue but they work.
    I un-vegan-ized them by topping them with a dash of chipotle sour cream (taco powder mix and FF sour cream) I made mostly because I don’t like mayo or any other spreads.
    They are a must try!
